Homemade Pesto with Orzo Pasta

Homemade Pesto with Orzo Pasta
Orzo is underused by the British and needs more love and attention. It resembles the shape of large grains of rice, but tastes just like pasta. I'm a big fan and enjoy it hot or cold. Homemade pesto is so much tastier than shop bought. If you're looking to create something special and memorable, homemade pesto will guarantee this!

Homemade Pesto with Orzo Pasta

2 Packets fresh basil

200g Parmesan

2 Garlic cloves, peeled and chopped

50g Pine nuts

160g Olive oil

500g Orzo

Sea salt & black pepper, to season

How to make

  1. Put all pesto ingredients (apart from olive oil) into a blender or food processor and gently blend together, adding oil bit by bit until you have a smooth, but slightly chunky texture. You want to be able to still see the shape of some of the pine nuts.

  2. In a medium saucepan, fill it half way with water and boil with a pinch of salt and one packet of orzo. Check cooking guidelines on the packet (usually 10 mins). Keep stirring every 30 seconds as orzo does tend to stick.

  3. Once cooked, drain the water, add the pesto, season and mix. Serve and garnish with fresh basil and Parmesan.

To add some texture, try adding some fresh rocket, diced mozzarella or whole pine nuts at the end.
