A lentil salad is perfect for sweaty, summer nights when you want something quick and cool to eat. This lentil salad benefits from the addition of tabbouleh true to its Mediterranean roots.

Lentil Tabbouleh


  • 1 cup cherry tomatoes
  • 1 bunch of scallions
  • 1 bunch parsley
  • 1 bunch mint
  • Extra virgin olive oil
  • 1 lemon

How to make

  1. Rinse lentils before cooking in salted water until soft. Drain and set aside.
  2. Slice tomatoes, scallions and chop parsley and mint.
  3. Combine lentils with scallions, tomatoes and herbs. Coat with olive oil and add lemon juice to taste.
  4. Add salt and pepper.
