Eton Mess
It doesn't get much more British than Eton Mess. The combination of fresh strawberries, meringues and whipped cream is synonymous with the word summer (and delicious). If running low on time, it’s possible to use pre-made meringues and start at step 5.

Eton Mess

Ingredients

  • 3 egg whites
  • 190 gm caster sugar
  • ½ tsp vanilla extract
  • 500 gm quartered strawberries
  • 400 ml double cream

How to make

  1. Preheat oven to 140C for meringues.
  2. Whisk egg whites until soft peaks form, then slowly add in sugar.
  3. Add vanilla after hard peaks have formed.
  4. Place dollops of meringue on a tray lined with baking paper and bake for 1.5 hours
  5. Combine double cream and 15 gm (approximately one tablespoon) of sugar and whip together until thick and soft.
  6. Break the meringues into chunk sized pieces and stir in with the cream/sugar.
  7. Lightly crush half of the strawberries in a bowl with a fork to release some juice and then mix together with meringue and cream combination.
  8. Divide between four glasses and use the second half of the strawberries as garnish.
