Grilled corn with feta, lime and smoked paprika
A twist on a classic BBQ side - based on Mexican Elotes, with a slightly lighter coating using greek yoghurt instead of mayonnaise

Grilled corn with feta, lime and smoked paprika


  • 4 large corn cobs
  • 100g feta - crumbled
  • 60ml sour cream
  • 60ml natural yoghurt
  • 1tsp smoked paprika
  • 1tsp cayenne pepper
  • 1 lime - cut into wedges
  • Small bunch coriander - chopped roughly
  • salt and pepper
  • olive oil

How to make

For the coating

  1. In a large bowl put the yoghurt, sour cream, 90g of feta, paprika and cayenne and mix until combined
  2. Season with salt and pepper to taste and put to one side

For the corn

  1. Rub each corn cob with oil, salt and pepper
  2. Cook on a barbecue or underneath a hot grill - turning regularly, making sure the kernels are caramelised and not burnt
  3. Once the corn is cooked, roll each one of the cobs around in the coating until completely covered
  4. Sprinkle the remaining feta and coriander on the coated corn and squeeze lime over the top
