Mexican Flank Steak Tacos
Authentic Mexican tacos with soft corn tortillas. A lot of ingredients go into making tacos and the process can be tasking, but it's definitely rewarding.

Mexican Flank Steak Tacos

Ingredients

  • Flank steak (3 lbs)
  • 32 ounces corn tortillas
  • Grated cheese of your choice

Marinade

  • Juice of 2 limes
  • 4 garlic cloves (crushed)
  • ½ cup olive oil
  • ⅓ cup white vinegar
  • ½ cup soy sauce
  • 1tsp paprika
  • 1tsp cumin
  • 1tsp garlic powder
  • 1tsp black pepper
  • 1tsp white pepper
  • 1tsp salt
  • 1tsp chilli powder
  • 1tsp dried oregano

Salsa

  • 9 ounces fresh tomatoes, chopped
  • 1 small onion, diced
  • 3 mild chillies, finely chopped
  • 1 bunch coriander, chopped
  • Salt to taste
  • Lime juice
  • 1tbsp water

Onion Relish

  • ½ cup cilantro, chopped
  • Juice of 1 lime
  • 1 white onion, diced

How to make

  • In a large baking pot, lay the steak. Set aside.
  • Whisk together all the marinade ingredients until they are well blended.
  • Pour this mixture over the steak and turn so as to coat both sides.
  • With a plastic wrap,cover and let it marinate for say 1 to 8 hours.
  • For the relish, mix all the ingredients together and set aside.
  • To make the salsa, dry fry the chillies in a skillet over medium to high heat for a few minutes.
  • Remove the pods and soak them in water for 30 minutes.
  • Place the remaining salsa ingredients on a baking sheet and roast for 20 minutes in a 450℉ preheated oven.
  • In a blender put the Chile pods and roasted vegetables and blend .
  • In a skillet heat vegetable oil.
  • Dice the marinated flank steak or cut it into stripes.
  • Cook the meat until most of the liquid has evaporated.
  • Warm the tortillas in an oven or skillet then arrange them on a plate.
  • Lay the beef over them and sprinkle onion relish.
  • Pour a spoonful of your salsa and garnish with lime and cheese.
