Vegan Stuffed Peppers

Vegan Stuffed Peppers


  • 2 white onions
  • 2 medium carrots
  • Olive oil
  • Salt and pepper
  • Smoked firm tofu (cut into small pieces)
  • Fresh rosemary and thyme
  • 1 cup (about 250 g) plain cooked couscous or quinoa
  • Fresh spinach (about 2 handfuls)
  • 2 bell peppers

How to make

  1. Cook finely chopped onions on very low heat for about 10 minutes until translucent.
  2. Add cubed carrots and cook another 10 minutes.
  3. Season with salt and pepper and then add tofu and cooked couscous and cook for another 5 minutes.
  4. At the very end mix in fresh spinach until wilted.
  5. Cut the bell peppers and take out the seeds. Place them on roasting tray cut side up, fill them with couscous mix, drizzle with good olive oil and sprinkle with fresh herbs.
  6. Place the tray with peppers in hot oven (roughly 200 C) for about 10 minutes until char-grilled.

Serve with simple green salad! Enjoy :)
