Healthy Katsu Curry | Lean Foods

Oh the shame of when you go to Wagamama with your friends, and everyone orders the same dish: katsu curry. You can see the waiters rolling their eyes at you whilst they scribble ’71’ on each and every placemat.

Save yourself the embarrassment with this healthy version of Wagamama’s katsu curry, ready to be cooked at home where you can enjoy it without the eye roll.

For the chicken

  • 2 chicken breasts
  • 1 large egg
  • 150g ground almonds
  • 1 tsp hot curry powder
  • 1 tsp garam masala
  • pinch of salt and pepper

For the katsu curry sauce


  • sushi rice

How to make

  1. Mix the ground almonds, curry powder, garam masala together in one bowl, and break the egg into another.

  2. Dip the chicken into the egg and then smother in the ground almonds mix.

  3. Fry lightly for 6-8 minutes. Once done, pop the chicken in the oven on 180 degrees for a further 20-25 minutes.

  4. In the meantime, chop up your onion, garlic and carrots and fry on a low heat. Add in the curry powder and soy sauce.

  5. Gently stir in your chicken stock with 500ml of water.

  6. Squeeze in the honey, and add the flour to help thicken the mixture.

  7. Once done, allow to cool and then blitz in the food processor to get the right mixture. It should be quite gloopy.

  8. Pop your rice on whilst the chicken is cooking. Once done, use a mould like a small bowl to help get that Wagamama shape!

  9. Serve with salad and pickled radish.
