Miso Aubergine Bowl - 'The Rainbowl'
A super tasty, vibrant and colourful meal. Easy weeknight or office lunch recipe that can be adapted to just about any requirements or base it on what is in the fridge.

Miso Aubergine Bowl - 'The Rainbowl'


  • 1 aubergine
  • 100g brown rice
  • 50g edamame beans
  • 100g radish
  • 100g golden beetroot
  • 200g purple sprouting broccoli
  • 10g tamarind paste
  • 10g miso paste
  • Coriander to garnish
  • Oilve oil
  • Juice of half a lemon
  • Salt

How to make

  • Pre-heat oven to 180
  • Mix tamarins and miso pastes
  • Slice aubergine in half lengthways and score the flesh, drizzle with oil and bake for 20 mins, then add the pastes and bake for a further 10-20 mins or until cooked
  • Boil brown rice according to packet instructions
  • Thinly slice radish and beetroot drizzle salt, lemon juice and olive oil
  • Boil broccoli for 2 mins then run under cold water to keep the colour
  • Boil edamame according to instructions on packet, then mix with rice
  • Once the aubergine is cooked arrange all the ingredients in a bowl or plate of choice
  • Garnish with coriander
