Mince Pies
Make these obligatory festive snacks for Santa and the whole family (substitute jam for those who aren't mincemeat fans)

Mince Pies


  • 1.5 jars fruit mincemeat
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1tsp baking powder
  • 125g butter at room temperature, cubed
  • Iced water
  • A little milk

How to make

  • Grease a muffin tin and preheat oven to 230ºC
  • Sift flour, salt and baking powder into a bowl
  • Add butter and rub into mixture until it looks like fine breadcrumbs
  • Add just enough cold water to blend into a firm, dry dough
  • Turn onto a floured board, and mould smooth with the fingers (handle lightly and do not knead!)
  • Roll out to desired shape and cut out 2 sizes of circles: large circles that fill and slightly overflow a muffin well and smaller circles to fit the top of the pies
  • Press the larger circles into muffin tins and spoon a teaspoon of mincemeat onto the pastry (do not overfill)
  • Brush the edge of the pastry with milk, then brush the edge of the smaller circles on one side and place this side facing down onto the pies
  • Seal all around the edges of the pie with a fork
  • Brush the top of the pies with milk and pierce with a fork
  • Bake for 15-20 mins or until golden brown on top
  • Remove from muffin pan immediately and leave to cool slightly
  • Dust icing sugar onto pies using a sieve and serve as is or with a topping of your choice
