Spelt Ginger Biscuits
The childhood favourite ginger biscuit, with a spelt flour makeover!

Spelt Ginger Biscuits


100g white spelt flour

50g soft light brown sugar

1 tsp ground ginger

50g butter at room temperature

1 tbsp of milk (I used oat milk)

How to make

  1. Pre-heat your oven to gas mark 6, 400ºF, 204ºC, 180ºC fan.

  2. Sift the flour, sugar and ginger into a mixing bowl. Add the butter, then using one hand, mix it together until you have a dry crumbly mix. Add the milk and continue to mix until you have a smooth dough.

  3. Lay a piece of greaseproof paper on the counter, place the dough on it and roll to about 5mm thick. Use a biscuit cutter to cut shapes, then remove the excess dough and use this to make more biscuits.

  4. Place in the oven for 12-15 minutes. They should be turning golden brown when they are ready.

  5. Remove and place the biscuits on a cooling rack, then eat when cooled.
