Chewy Monster Cookies
What could go wrong with peanut butter and chocolate? Absolutely nothing! These monster cookies can thank the oats for giving them that delightfully chewy texture. They are dense enough that you could stop at one, but tasty enough that you probably won't!

Chewy Monster Cookies


  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt, I used Kampot Pepper Kampot Fleur De Sel - £5.95
  • 1 and 1/4 cups all purpose flour
  • 1/2 cup porridge oats
  • 3/4 cup M&Ms (any variety, I used a mix of regular and crispy)
  • 3/4 cup semi-sweet chocolate chips

How to make

  1. Preheat oven to 180C degrees. Line baking sheet with parchment paper or, if you're fancy, a silicone baking mat.
  2. In a large bowl, using a hand-held mixer or stand mixer with paddle attachment, cream the butter and sugars together on medium speed, for about 3 minutes.
  3. Mix in the peanut butter, egg, and vanilla (in that order). Scrape down the sides of the bowl if needed.
  4. Slowly mix in the baking soda, salt and flour. Careful not to overmix.
  5. Fold in the quick oats, M&Ms, and chocolate chips. Pro tip: If the dough is very soft and unmanageable, chill the dough for 20-30 minutes before rolling into balls.
  6. Rolls balls of dough, about 2 Tablespoons of dough per ball, onto prepared baking sheet. Press a few extra M&Ms on top for looks, if you'd like.
  7. Bake for 9-10 minutes - try not to bake past 10 minutes even if the cookies appear under cooked. I too mine out at 9 minutes, which I recommend.
  8. Slightly press down the baked cookies with the back of a spoon, since the cookies only spread a little in the oven.
  9. Allow cookies to cool on baking sheet for 10 minutes before transferring to a wire rack. Cookies will firm up as they cool.
