Baked Blueberry Oatmeal
I normally enjoy a bowl of porridge for breakfast. But when I'm not working from home or I have a busy week I'll bake up a batch of baked oatmeal to take with me on the go.

Baked Blueberry Oatmeal


  • 2 cups of rolled oats (not instant or refined)
  • 2 tbsp chia seeds
  • 2 cups unsweetened almond milk (or any non-dairy)
  • 2 large eggs
  • 1 medium banana
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 50g flaked almonds
  • 100g blueberries

How to make

  1. Preheat oven to 180C
  2. Combine oats, chia seeds and cinnamon in a baking dish
  3. Mash banana and combine with almond milk, vanilla and eggs
  4. Pour over oats
  5. Top with blueberries and almonds
  6. Bake for 50 minutes or until middle is cooked through.

Watch out for burning the almonds on the top. This can either be enjoyed hot or popped in the fridge for breakfast on the go.
