Beetroot hummus on sourdough toast
I tried to tell my boys that hummus was made from butter beans - the same ones used in butter beer in Harry Potter. They didn't fall for it, very frustrating! However it doesn't make this light and simple snack any less delicious

Beetroot hummus on sourdough toast

Ingredients

  • 400g tin of organic butter beans (drained)
  • 2 small cooked beetroots - roughly chopped
  • 1 clove garlic - finely chopped or grated
  • 1 tbsp tahini paste
  • 100g cherry tomatoes - halved
  • 1 punnet of cress
  • 1tbsp toasted sesame seeds
  • Sourdough bread - toasted
  • Salt to taste

How to make

  1. Put your bread on to toast
  2. Put your beans, beetroots, garlic and tahini in a food processor and blend until smooth
  3. Season with salt to taste
  4. Spread the hummus on the toasted sourdough, and top with the chopped tomatoes, cress and sesame seeds
