Asparagus parcels
This is delicious but perhaps pastry is not as healthy as some of my recipes! I don’t believe in cutting out any specific food groups unless you have a specific allergy or intolerance to certain foods. In my opinion, it is healthy to eat a wide range of foods and in particular incorporate as wide a variety of plant based foods & fresh vegetables as possible into your diet.

Asparagus parcels

Ingredients

  • 250g spinach
  • 200g asparagus tips
  • 50ml double cream
  • 1 tsp olive oil
  • 2-3 cloves garlic - minced
  • 75g fresh parmesan
  • 250g puff pastry block (I used ready made)
  • salt and pepper

How to make

  1. In a frying pan, heat the olive oil and saute the garlic
  2. Add the spinach and let it wilt then add the double cream and cook down the liquid as much as possible. Season with salt and pepper to taste
  3. Roll the pastry and cut into 8 equal squares
  4. Lay spinach, asparagus spears and a sprinkle of parmesan diagonally across each of the squares
  5. Take the edges not covered by the vegetables and fold over, with one corner on top of the other. Brush a little water or beaten egg onto each to stick the pastry down
  6. Cook in an oven at 180°c for around 15 minutes or until the pastry is nicely browned
  7. Sprinkle with some chilli flakes to serve
