Spinach Doughnuts
The best thing about my waffle maker is that it also came with a doughnut tray! I love A little Saturday afternoon baking with the kids and this so easy you can get these gorgeous doughnuts topped with dark chocolate, pistachios and rose petals in just 15 minutes!

Spinach Doughnuts


  • 1 cup buckwheat flour
  • 100g baby spinach
  • 1 small banana
  • 3 tbsp honey
  • 1 tbsp coconut oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 2 cubes dark chocolate - melted
  • Salt
  • Rose petals and chopped pistachios to decorate

How to make

  1. Mix the spinach, banana, honey, coconut oil, egg and vanilla extract into a blender and blend to a smooth puree
  2. Mix the flour, baking powder and baking soda in a bowl and add the puree, folding together until all the ingredients are combined
  3. If you have a waffle maker/doughnut tray - pour into this and bake. If cooking in an oven, heat to 180°c and bake in doughnut rings for around 5-10mins depending on size
  4. Spread melted chocolate on each cooked doughnut and sprinkle with pistachios and rose petals to decorate
