Vegan Mug Cake: Banana Baked Oats

Vegan Mug Cake: Banana Baked Oats

Ingredients

  • 1/3 Cup of Oats
  • 1 Small Banana (mashed)
  • 1/4 Tsp of Baking Powder
  • 1/4 Tsp of Ground Ginger
  • 1/4 Tsp of Ground Cinnamon
  • 1/4 Tsp of Vanilla Essence
  • 1/3 Cup + 2 Tbsp of Spiced Almond Milk
  • 2 Tbsp of Maple Syrup
  • Pinch of Salt.

How to make

  1. Combine all the ingredients together in a large mug with a fork.

  2. Microwave for 2 Minutes, keeping a close eye to make sure it doesn't overflow.

  3. Take out and stir vigorously for 30 seconds.

  4. Leave to cool for 1 Minute.

  5. Cook for a further 2 Minutes, keeping a close eye. Leave to cool slightly before eating, top with banana, nondairy yoghurt, or nuts if desired. The top should be nice and crisp just like if it were baked!
