Vegan Burrito Bowl

Vegan Burrito Bowl


  • 1 Can Black Beans (around 1 1/4 Cup)
  • 1 Tsp of Paprika
  • 1 Tsp Ground Cumin
  • 1 Tbsp Olive Oil
  • 2 Cloves of Garlic (crushed)
  • Salt and Pepper to taste
  • 1 Cup of Water
  • 1 Tsp Muscavado Sugar
  • Juice of one small lemon.

How to make

  1. Fry the garlic in the oil until it becomes fragrant.

  2. Add the remaining ingredients and cook on high for 5 minutes.

  3. Turn the heat to medium low, and using a masher, semi mash the mixture (to break up the beans).

  4. Continue to cook, stirring occasionally for 10 minutes.

  5. Reduce heat to low and continue to cook for 5-10 minutes until the mixture has broken down.

Serve with peppers, sweetcorn, onions, salad, and wraps, (you can season the peppers, sweetcorn, and onions in a pan in 1 tbsp of olive oil, 1 tsp of cajun seasoning, 1/2 tsp of paprika, and salt and pepper to taste). Note: I also served mine with plain tortilla chips to dip into the beans!
