Vegan Breakfast Burrito

Ingredients

Sweet Potato Fries

  • 2 Tbsp of Panko Crumbs
  • 1 Tsp of Sage. Salt and Pepper to taste
  • 1 Tsp of Cornflour
  • 1 Tbsp of Oil
  • 1 Large Sweet Potato (Cut into thin long horizontal strips)

Mexican Beans

  • 1/2 Cup of Soaked Mixed Beans
  • 1/4 Cup of Sweetcorn
  • 1 Tsp of Paprika
  • 1 Tsp of Cajun Seasoning
  • Salt and Pepper to Taste
  • 1 Tbsp of Tomato Puree
  • 1/3 Cup of Water
  • 1 Tsp of Sugar

For the Wraps

  • 1 Large White Tortilla Wrap
  • 1/3 of a Red Pepper, cut into thin slices
  • 1/2 Cup of Spinach.

How to make

Sweet Potato Fries

  1. Combine the ingredients for the sweet potato fries in a bowl.
  2. Place on a baking tray and cook in an oven at 220C for 20-25 minutes, (until slightly crisp on the outside, and cooked inside).

Mexican Beans:

  1. Combine the ingredients for the beans inside a medium sized saucepan. Cook on a medium high heat for 5 minutes.
  2. (If the mixture is starting to look dry, add a further 1/2 cup of water). Cook on low, covered, for 10-15 minutes, until the beans are soft. Combine all the ingredients together in a wrap and roll, cooking in the heated oven for 2-4 minutes.
