Vegan Baked Raspberry Porridge with all the toppings
I'm never normally one for this kind of decadence but I find this bowl is perfect for a miserable day! 5 minutes to prep. 50 minutes cooking and cooling time. Total time: 55 minutes. Can feed one very hungry person, or at least 3 people looking for a not so decadent breakfast!

Vegan Baked Raspberry Porridge with all the toppings


Dry ingredients:

  • 1 Cup GF Oats.
  • 2 Tsp Cinnamon.
  • Pinch of Salt.
  • 1 Tsp Baking Powder.
  • 1 Cup Raspberries.

Wet Ingredients:

  • 1 Cup Unsweetened Vanilla Rice Milk.
  • 2 Tsp Vanilla Essence.
  • 1/4 Cup Maple Syrup.
  • Chia Mix (2 Tsp Chia Seeds mixed with 6 Tsp Water; leave till turns gel like).
  • 2 Tbsp Vegan Butter (melted).

How to make

1) Whisk together the dry ingredients in a large bowl. 2) Place the raspberries at the bottom of a heat proof dish. 3) Pour dry mixture over fruit in the dish. 4) Whisk together the wet ingredients in a separate bowl till well combined. 5) Pour on top of the dry mixture making sure all of it is covered. 6) Place into the oven, heated to 180°C. 7) Cook for 30 minutes or until golden and brown. 8) Leave to cool for 10 minutes. 9) Top with whatever you feel like and enjoy! (Definitely recommend serving with some vegan vanilla yogurt!)
