Raw Vegan Pistachio and Pumpkin Seed Protein Balls

Oh no you're vegan?! You must be so deficient in protein?! Poor baby.

Well... actually, I think I get enough protein and it's of the healthiest kind!

These super easy 'Raw Vegan Pistachio and Pumpkin Seed Protein Balls' take 10 minutes to prepare, 20 minutes to chillI, and make 12 protein balls. It's that easy!

Can be served with pumpkin seed butter for a not so raw indulgence 🍃✨

As a fitness addict, who also happens to be a busy student with a part-time job, these are perfect for a quick energy kick, and they're so yummy. Happily vegan and omnivore approved.

Raw Vegan Pistachio and Pumpkin Seed Protein Balls

Ingredients

  • 1 Cup Pistachio Kernels. -1/3 Cup Pumpkin Seeds.
  • 8 Dates soaked in water till soft, (10 minutes should be enough!).
  • 1/3 Cup GF Oats.
  • 1 Organic Lemon.

How to make

  • Put the pistachio kernels, pumpkin seeds and oats into a blender and blitz until well combined and grinded.
  • Add the softened dates to the blended mix, and blitz until a dough-like and smooth (or smooth enough at least; chunks add texture!) mixture forms.
  • Pour into a separate bowl and squeeze the juice of the lemon over.
  • Mix the ingredients with a spoon until well combined.
  • Shape (with your hands) into 12 small protein balls. Place on a baking tray.
  • Refrigerate for 20 minutes and eat!
