Vegan; Pea and Mint Soup
This recipe is refreshing enough to have in summer and great to make and keep for a few days!

Vegan; Pea and Mint Soup

Ingredients

  • 2 Cups Frozen Peas
  • 2 Cups Vegetable Stock
  • 1 Tbsp Vegan Margarine
  • 1/2 Chopped White Onion
  • 2 Tbsp Dried Mint
  • 1/2 Tsp Salt and Pepper
  • Pinch of Dried Chillies

How to make

  1. Cook the onion in a medium-sized saucepan with the margarine.

  2. Add the water and peas to the saucepan and stir.

  3. Wait till the mixture starts to simmer and add the remaining ingredients.

  4. Cook on a low heat for 20 minutes.

  5. Remove the mixture from the heat, and blend.

  6. In a measuring jug mix 30ml of water with 1 tbsp of corn flour.

  7. Pour the blended soup mixture back into the saucepan and add the corn flour mixture.

  8. Cook on medium high until the mixture starts to thicken (around 30 minutes), stirring occasionally to stop it from burning.
