Vegan; Coconut, Lime and Date Bars with Passionfruit Date Sauce.
They're tropical and a great source of energy! I made the recipe up at gone midnight, and they turned out so well I was delighted!

Vegan; Coconut, Lime and Date Bars with Passionfruit Date Sauce.

Ingredients

Dry ingredients:

  • 1 Cup Coconut Flour
  • 1 Cup GF Oats
  • 1/2 Cup Desiccated Coconut
  • 2 Tsp Ground Flaxseed
  • Pinch of Salt.

Wet ingredients

  • 1 Cup Coconut and Almond Milk
  • 1 Cup Cashew Milk
  • 1 Large Mashed Banana
  • 1/3 Cup Agave
  • 1/3 Cup Fruit Syrup
  • 2 Tbsp Lime Juice
  • 8 Chopped Zamli Dates.

How to make

  1. Whisk together the dry ingredients in a large bowl.

  2. In a separate bowl, whisk together all the wet ingredients.

  3. Pour the wet ingredients into the bowl with the dry ingredients and mix with a wooden spoon.

  4. Add the chopped dates and mix until well combined.

  5. Pour into a greased square tin, and place in a preheated oven at 160C.

  6. Cook for 45 minutes.

  7. Leave to cool and cut.

For the sauce:

  1. Soak 8 Large Dates in Warm Water Overnight, or boiled water for at least 10 minutes.

  2. Remove the pits and place in a blender with 1/3 Cup of Passionfruit, and 1/4 Cup of Water.

  3. Blend until all the date is well broken down and mixed with the passionfruit.
