Pork sausage stuffing
This classic recipe has always been a firm favourite at the Christmas table. The sage and onion bring out the flavours of the turkey beautifully. This recipe is great as a side or to stuff in the turkey also.

Pork sausage stuffing


  • 1 onion
  • 25g butter
  • 1 garlic clove
  • 100g white breadcrumbs
  • 1kg sausage meat
  • Handful fresh parsley
  • Handful fresh sage
  • 1 egg, beaten

How to make

  1. Chop parsley, sage and the onion finely
  2. Heat a fying pan and start frying the onion on a low heat with a knob of butter for around 8 mins
  3. Place breadcrumbs, onion and garlic in a large bowl and add 70 ml of water and start mixing together.
  4. Mix in parsley, sage and sausage meat
  5. Mix in enough beaten egg to bind the mixture
  6. Place in a baking tray and cook at 190˚C for approx 35-40 mins
