Millionaire Shortbread
Millionaires shortbread has to be one of the most moreish treats out there. Shortbread mixed with gooey homemade caramel and a smooth layer of chocolate what's not to love?

Millionaire Shortbread


Shortbread base

  • 150g unsalted butter, softened
  • 50g golden caster sugar
  • 160g plain flour

Caramel layer

  • 1 can condensed milk
  • 150g unsalted butter
  • 150g golden caster sugar


  • 100g milk chocolate
  • 200g plain chocolate

How to make

For the shortbread

  • Combine soft butter with the sugar and mix in the flour
  • Once it's been mixed pop it in a greased up tin. Prick with a fork and bake for 25 mins at 180C, it should be golden brown
  • Remove from the tin and leave to cool completely

For the caramel layer

  • Over a very low heat, combine the condensed milk, butter and sugar together in a saucepan, stirring constantly
  • Once the mixture has melted increase the heat but continue stirring
  • When the sugar starts to dissolves, the mixture will turn from a yellow to golden it will also start to thicken
  • Pour the caramel into a cool bowl to allow it cool down before pouring it on the shortbread layer

For the chocolate

  • Break up the two bars of chocolate into a microwave bowl. Heat for 30-second intervals and stirring in between.
  • Once melted pour over your cooled caramel layer. Smooth with the back of a spoon,
