Chilli con carne
Chilli con Carne is such a versatile dish and can be made in so many ways. Eat it with beans or in tacos and accompany it with some delicious guacamole and salad and you have a Mexican feast in your hands. You can also make this in a big batch and freeze for later.

Chilli con carne


  • 500g frozen beef mince
  • 2 tbsps olive oil, for frying
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tsp chilli powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tin chopped tomatoes
  • 1 tin red kidney beans, drained and rinsed
  • 400ml beef stock

How to make

  1. Heat oil in a large frying pan and add the onion, garlic and cook on a low heat for 2-3 mins
  2. Add tomato puree, cumin and coriander and cook for 5 more mins
  3. Next, add the mince and turn up the heat, cook until it changes colour.
  4. Pour the chopped tomatoes into the saucepan, bring it to the boil and then allow to cook down for 5 mins
  5. Pour kidney beans and stock into the saucepan and bring to the boil. Stir occasionally and turn down the heat and leave to simmer for 30 mins.
