Venison Fig Salad
Venison is often thought to be a winter food but I’ve made this into a light summery salad using figs and walnuts. I’ve used spicy leaves to offset the sweetness of the smoked venison and the figs. The salad is meant to serve two people as a starter or one as a main course.

Venison Fig Salad


  • 100g smoked venison
  • 50g spicy salad leaves
  • 3 ripe purple figs, quartered
  • 25g walnut halves
  • 3 sprigs flowering thyme
  • 2 tbsp extra virgin olive oil
  • 1 tbsp sweet and sour pear condiment seasoning

How to make

  1. Arrange the smoked venison into curls and lay on the spicy salad leaves
  2. Arrange the figs and walnuts on salad and sprinkle with the flowering thyme.
  3. Drizzle with the oil and the sweet pear condiment.
