These lovely light Free-from cakes are super simple and easy to make. Get creative and add your own ingredients to this base recipe for delicious results.

Ingredients

How to make

  1. Place the margarine and sugar in a large bowl or the bowl of a stand mixer and beat together until light and fluffy.

  2. Add all the other ingredients and gently combine before beating together for a further minute.

  3. Add chopped glacé cherries, raisins, chocolate chips or anything else that takes your fancy.

  4. Divide the mixture between 12 muffin cases sitting in a muffin tray.

  5. Bake in a pre-heated oven at 180°C, 160°C fan, gas mark 4 for 15 - 20 minutes until springy to the touch.

  6. Cool before decorating.
