Dissatisfied with the nutritional qualities of gluten-free food when my daughter was diagnosed with coeliac disease, I set about creating my own wholesome flour blend that I could use in everything I made. After 23 different blends, a lot of experiments and many years I came up with this. It is a source of protein and fibre and has many nutritional benefits being made from 70% wholegrain flours (teff, sorghum and buckwheat). Tapioca and potato starch lighten the blend so that it performs well in everything including bread, pastry (all types), cakes, biscuits and even pasta.
