Mediterranean Pesto Salmon

Pesto topped salmon, try this twist on traditional grilled salmon! We served ours with roasted Mediterranean vegetables; courgettes, red onions, sweet peppers, cherry tomatoes, drizzled with a little pesto and a generous glug of extra virgin olive oil.

  • 4 salmon fillets
  • 1 pack of Taste Collectiv Pesto x 3 - £11.97
  • Selection of Mediterranean vegetables (red onion, courgette, aubergine, red pepper), roughly chopped into 2cm pieces
  • Extra virgin olive oil
How to make
  1. Pre-heat the oven to 200°C.

  2. Spread the chopped vegetables out evenly in a roasting tray, drizzle with olive oil and season with salt and pepper before roasting for 30-40 minutes. Remove from oven and cover with foil to keep warm.

  3. Pre-heat the grill to medium.

  4. Spread the top of each salmon fillet with pesto.

  5. Place under the grill for 15 minutes or until cooked through.

  6. Serve the salmon on a bed of the roasted veg.
