Mediterranean Pesto Salmon
Pesto topped salmon, try this twist on traditional grilled salmon! We served ours with roasted Mediterranean vegetables; courgettes, red onions, sweet peppers, cherry tomatoes, drizzled with a little pesto and a generous glug of extra virgin olive oil.
- 4 salmon fillets
- 1 pack of Taste Collectiv Pesto x 3 - £11.97
- Selection of Mediterranean vegetables (red onion, courgette, aubergine, red pepper), roughly chopped into 2cm pieces
- Extra virgin olive oil
Pre-heat the oven to 200°C.
Spread the chopped vegetables out evenly in a roasting tray, drizzle with olive oil and season with salt and pepper before roasting for 30-40 minutes. Remove from oven and cover with foil to keep warm.
Pre-heat the grill to medium.
Spread the top of each salmon fillet with pesto.
Place under the grill for 15 minutes or until cooked through.
Serve the salmon on a bed of the roasted veg.
