Truffle Polenta Chips

Ingredients

How to make

  1. Boil the water and stock in a large pan.
  2. Add the polenta in a steady stream and whisk quickly and constantly.
  3. Reduce the heat
  4. Do not leave unattended and keep stirring for 10 minutes until a think consistency.
  5. Season with salt and a touch of butter or oil (taste to check)
  6. Line a square dish with clingfilm and pour in mixture
  7. Leave to cool so it becomes set and firm to the touch
  8. Preheat oven to 200, remove polenta and cut into 'chip' size.
  9. Line baking tray with foil, scatter the chips and use a generous amount of cooking spray or oil.
  10. Bake for 30-40 mins and turn half way through (more oil or spray may be needed)
  11. Once out of the oven season with Truffle salt or truffle oil.
