Sweet Potato Hash
A one pot easy, tasty and adaptable recipe. Spice it up with chorizo, mushrooms or anything else that takes your fancy.

Sweet Potato Hash

Ingredients

  • 600g sweet potato (diced)
  • 4 eggs
  • 500g spinach
  • 2 tbsp Bonallack Great Granola Dukkah

How to make

  1. Boil the sweet potatoes for 6-8 mins until soft.
  2. Using an overproof pan heat a little oil and salt and pepper.
  3. Add the sweet potatoes and lightly fry for a few minutes.
  4. Lightly press the potatoes to form a very chunky mash/cake.
  5. Allow to cook for another few minutes to get a crisp layer at the bottom.
  6. Turn the grill on to high. Add the spinach and crack the eggs on top. Season with salt and pepper.
  7. Place under the grill and cook for a further 2-3 minutes or until eggs are cooked they way you prefer.
