Punchy Pineapple Slaw
A tasty sweet and spicy slaw. A great addition to a picnic or serve as a salad.

Punchy Pineapple Slaw


  • 4 bok-choy heads
  • 1 small pineapple or half a large
  • 50g fresh coriander
  • bird's eye chilli (use enough for your taste)

How to make

  1. Thinly slice the coriander, bok-choy and chilli. Mix together in a bowl.
  2. Take skin off pineapple – cut around the core and discard it.
  3. Thinly slice the flesh.
  4. Mix together and serve (best left for an hour or so in the fridge).
