Parmesan and Garlic Crust Chicken
A take on the chicken kiev, this recipe spruces up the humble chicken breast with a zing of fresh herbs, garlic and tangy parmesan. Serve with your choice of vegetables – we recommend pan-fried broccoli with garlic and chilli.

Parmesan and Garlic Crust Chicken

Ingredients

  • 1 skinless chicken breast
  • 3 garlic cloves, finely minced
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped mint
  • 1/4 cup chopped parsley
  • 2 tbsp olive oil

How to make

  1. Preheat oven to 200ºC and line baking sheet with parchment paper.

  2. Mix together garlic, cheese, fresh herbs and olive oil in a small bowl.

  3. Place the chicken breast down on the baking sheet and cover it with the cheese mixture, making sure it is evenly spread. Place in the oven and bake for 30 minutes.
