Healthy Cookie Dough Ice Cream
Cookie dough, what's not to love. It takes minutes to make and you can leave it in the fridge, eat it with a spoon, add it to ice-cream or use it for it's intended use, make glorious cookies. We decided to do a healthy spin on this recipe which we're sure you'll love!

Healthy Cookie Dough Ice Cream

Ingredients

Ice cream

  • 1 can of coconut milk
  • 2 tsp vanilla extract
  • 40g coconut sugar
  • 120ml oat milk
  • a sprinkle of salt

Cookie dough

  • 70g coconut flour
  • 1 tsp baking powder
  • 2 tbsp coconut sugar
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil
  • 6 tbsp oat milk – add more if needed
  • dark chocolate chunks – as many as you want!

How to make

  1. Mix together all of your ingredients for your ice cream and pop it into a machine. You can always hand whisk and leave in the freezer if needs be!

  2. Whilst waiting, chop up your chocolate into small chunks and then mix together all your ingredients. Slowly add in the milk until it forms the right consistency.

  3. After around 30 minutes (if using a machine), or longer if not, check your ice cream and slowly add the cookie dough mixture, stirring thoroughly.

  4. Once done, serve with some fresh fruit or just tuck in.
