Kolokythokeftedes (fried zucchini fritters)


  • 2 cups grated zucchini drained in colander for at least 3 hours
  • ⅓ cup feta
  • ¼ teaspoon fresh dill
  • ¼ teaspoon fresh oregano
  • ¼ teaspoon fresh parsley
  • ¾ cup flour
  • ¼ cup olive oil (enough for frying)
  • Sea salt and pepper

How to make

  1. Combine zucchini, dill, oregano, and parsley in a large bowl, mixing well
  2. Heat olive oil in a large pan on medium heat
  3. Roll the zucchini mixture into small balls
  4. Roll balls in flour to coat
  5. Place balls in heated oil
  6. Cook each side until balls are golden brown in color
  7. When finished, place balls on a paper towel to remove excess oil
  8. Season with salt and pepper to taste
