Freekeh, Quinoa & Serrano Ham Courgetti
Whilst our dish contains cheese and meat, it would be easy to turn this into a vegetarian or vegan dish, and just as tasty! It's seriously easy to make, and requires virtually no cooking, meaning it's perfect for lunches and dinners, both at home and outside. We served ours warm, but try it cold too – the flavours and textures pop.

Freekeh, Quinoa & Serrano Ham Courgetti


  • 2 yellow courgettes, ribboned
  • 1 green courgette, ribboned
  • handful of yellow tomatoes
  • 150g of mixed freekeh and quinoa
  • ½ red onion, diced
  • shredded Serrano ham
  • shredded ball of mozzarella
  • 1 can of chickpeas, drained
  • fresh basil for garnishing

How to make

  1. Ribbon your courgette using a potato peeler or spiralizer.

  2. Cut up the rest of your vegetables, mozzarella and ham. Drain your can of chickpeas.

  3. Boil the grains – 1 cup to 2 cups of water.

  4. Now fry your courgette for 4-5 minutes in a drizzle of olive oil.

  5. Mix all the prepared ingredients together and season generously.
