Crab Cakes
A very simple and easy recipe which can be prepared and cooked within 30 minutes. It can be served as a starter or even for a light lunch.

Crab Cakes

Ingredients

250g Cooked crabmeat

100g Mashed potatoes

1 tbsp Fresh coriander or parsley, chopped

2 Spring onions, sliced

1 Red chilli, finely chopped

1 Garlic clove, finely minced

1 Egg

Salt & pepper, for seasoning

Plain flour, for dusting

Oil (of your choice), for frying

How to make

  1. Add all the ingredients, except for the flour and oil, into a bowl and combine until it's mixed well and forms a dough. Make sure to season generously.

  2. Split the mixture into 6 portions and form into patties. If the mixture is too sticky, you can put in the fridge to firm up for 10/15 minutes.

  3. Once formed into shape, lightly dust the crab cakes with the flour and fry in shall oil until golden on both sides, roughly 5 minutes.

  4. Serve with a tartare sauce or sweet chilli sauce, depending on your preference, alongside a nice fresh salad.
