Gluten-Free Courgette Fritters
The perfect brunch crowd-pleaser, these courgette fritters are super easy to make and can be loaded with your fave toppings!

Gluten-Free Courgette Fritters


  • 3 large courgettes, grated
  • Small handful chives, chopped
  • Small handful coriander, chopped
  • 2 spring onions, chopped
  • 2 fresh green chillies
  • 200g gluten-free, self-raising flour
  • 4 eggs
  • 1 cup almond milk (or milk alternative of your choice!)
  • Salt & pepper to taste

Optional Toppings:

  • Crème fraîche
  • Avocado
  • Smoked Salmon
  • Bacon
  • Chopped coriander, spring onions
  • Lime or lemon

How to make

  1. Grate the courgettes and squeeze out the excess water.
  2. Mix the flour, eggs, almond milk together to form a batter.
  3. Add chopped coriander, spring onions, chives and green chillies. Followed by the grated courgette and plenty of salt and pepper.
  4. Add a small dollop of the batter to a heated pan and cook until golden brown on both sides.
  5. Top with your chosen toppings! For example smoked salmon, crème fraîche and plenty of lemon.
  6. For extra heat, add in dried chilli flakes.
