My Favourite Chicken Recipe
This has to be one of my favourite recipes for chicken. It is made with my spicy kecap manis, a sweet and spicy soy sauce which I make in my kitchen in North London. The sauce contains garlic, chillies, ginger and galangal, flavours that make the chicken juicy and delicious and like nothing you've ever tasted before.

How to make

  1. Rub the chicken (use either thighs, wings or a whole chicken) with roughly a third of the bottle of spicy kecap manis.
  2. Leave it to marinade for a few hours or overnight in the fridge.
  3. Roast in the oven at 220C degrees for until the chicken is done. Turn halfway so both sides get crispy. The result is a juicy piece of chicken that's great with either garlic mash, roast potatoes, noodles or rice. If you can handle a bit more heat drizzle some spicy kecap manis over the chicken when it's done.
