Orkney Buffalo Sirloin Steak – Cooked to Perfection

It's hard enough cooking a beef steak right, let alone a buffalo one. Orkney Buffalo's Naomi Bremner shares her tips for cooking the perfect buffalo sirloin steak:

"It's important to know that Buffalo steak has a finer grain than standard beef steak. The sirloin is full of flavour and incredibly succulent from very fine intermuscular fat. This fat is lower in saturated fats than standard beef and naturally rich in Omega-3 fatty acids. The trick is to cook it at lower temperatures than you would a normal steak. Here's how to cook it to perfection."

How to make

  1. Bring the steaks up to room temperature and season well. Preheat the oven to 130°C.

  2. Place the steaks onto a rack in the oven and cook for 15 minutes.

  3. Remove the steak from the oven and seal in a hot pan with rapeseed oil for 1 minute either side and quickly on the fatty edge.

  4. Serve with sweet potato chips, onion rings, mushrooms, tomatoes and peas, or whatever you fancy!
