Small handful of flat leaf parsley – finely chopped
Fresh milled pepper to taste
How to make
Wash and clean the prawns (you can keep the heads – they add so much flavour to this dish!)
Pour a jar of Greka tomato sauce with ouzo in an ovenproof dish and add the prawns.
Leave them to cook for 10 minutes in a preheated oven at 180 degrees – so they cook but stay juicy!
After 10 minutes take the dish out of the oven, crumble the feta on top and put back in the oven for another 5 minutes until the feta is nice and golden.
Take the dish out of the oven, sprinkle with parsley and add a few twists of the fresh milled pepper.
Enjoy with some lovely warm crusty bread! Delicious!
Tip: You could replace the prawns for sardines if you wish – just wash and clean the sardines discarding the heads. Follow the same steps as above and bake in the oven for 30 minutes at 180 degrees until the sardines are cooked in the sauce. Leave the feta cheese out but sprinkle with fresh parsley.
