No Bake Strawberry Cheesecake
A delicious ending for a Greek meal, using Greka's classic spoon sweets to finish it off

No Bake Strawberry Cheesecake

Ingredients

  • 200g digestive biscuits
  • 75g unsalted butter
  • 300g mascarpone (at room temperatures)
  • 400g full fat cream cheese (at room temperature)
  • 200g icing sugar
  • 1 tsp vanilla extract
  • 1 jar Greka strawberry or sour cherry spoon sweet

How to make

  1. Melt the butter in a saucepan, meanwhile crush the biscuits to a powder and stir in to the butter once it's fully melted
  2. Press the buttery biscuit crumbs into the bottom of a 23cm loose bottomed tin
  3. Put in the fridge to set whilst you prepare the topping
  4. Combine the marscapone and cream cheese in a bowl and beat together with a handheld mixer until fluffy
  5. Add the icing sugar gradually to incorporate, adding the next spoonful once fully mixed in
  6. Finally, add the vanilla extract and mix until everything is well combined
  7. Spread the cheese mixture over the biscuit base and smooth the top with a palette knife
  8. Cover with cling film and chill in the fridge for at least 4 hours
  9. After 4 hours, remove from the fridge, release from the tin and add the strawberry or sour cherry spoon sweet over the cheesecake and serve.
