Chicken Souvlaki
A Classic greek dish perfect to grace any summer table

Chicken Souvlaki

Ingredients

  • 4 chicken breasts (skin removed)
  • 1tsp dried oregano
  • 2 cloves garlic
  • olive oil
  • 1 lemon
  • salt and pepper
  • skewers (wooden or metal)

How to make

  1. Cut the chicken breasts in equal chunks (not too small, as they will dry out when they are cooking).
Put the chicken pieces in a bowl, drizzle with olive oil (so they are all coated), add chopped garlic, oregano, salt and pepper. Leave to marinade for half an hour

  2. Assemble the chicken pieces in the skewers (if using wooden make sure they are soaked in water for 30 mins) – grill/barbecue or bake for 10 – 15 minutes, until cooked all the way through but not burned

  3. Once ready – squeeze the lemon all over and serve
