No Bake Spiced Granola Bars

These beauties are no bake, no fuss and ALL flavour. They're chunky and chewy, and we’ve used our Fig Walnut & Vanilla granola, but you could use any of our 3 signature flavours.

No Bake Spiced Granola Bars

Ingredients

  • 1.5 cups of Granola for Gangsters Fig, Walnut & Vanilla Granola - £5.50
  • 1 cup of roughly chopped nuts and/or whole seeds (we used walnuts & almonds)
  • ¼ cup of honey or maple syrup
  • ¼ cup of coconut oil
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • ½ teaspoon grated ginger or ground

How to make

  • Slowly heat the honey, coconut oil, vanilla and spice in a medium saucepan over a low heat.
  • As it starts to foam gently, mix in the the granola, nuts, seeds and ginger.
  • Line a baking dish with greaseproof paper and spoon in the mixture.
  • Press the mixture into the dish and don’t be afraid to use some force! The more compact, the better your bars will hold together.
  • Pop them in the fridge for a couple of hours to set. We recommend 2 hours.
  • Once they’re ready, cut them into your desired size and watch them disappear before you can shout "they’re ready!"
