Moroccan Veg Couscous
A great option for a packed lunch, or as a side to a main meal. You can vary the vegetables to include your favourites.

Moroccan Veg Couscous


  • 150g maize couscous
  • 1 tbsp garlic oil
  • ½ pepper
  • 2 tomatoes
  • green tips of 4 spring onions
  • 120g tinned chickpeas, drained weight
  • 2 tbsp dried cranberries
  • 1tsp Fodify Foods Moroccan Spice 45g
  • 1tbsp balsamic vinegar
  • salt and pepper ​

How to make

  1. Make up 150g maize couscous as instructed on the packet and leave to cool.
  2. Add 1tbsp garlic oil to the couscous and mix thoroughly.
  3. Finely chop the pepper, tomatoes and spring onion tips.
  4. Add the chopped vegetables, chickpeas and dried cranberries and mix well.
  5. Add 1tsp Fodify Moroccan Spice, 1tbsp balsamic vinegar and season with salt and pepper.
  6. Mix well and serve.
