Whole muscles from the hindquarters of wild venison, dry cured in a blend of salts, sugar and spices and slowly air dried. It has a rich 'gamey' flavour and soft texture. Venison also has the health benefits of being high in protein and low in cholesterol.

Store at ambient temperature. Once opened, refrigerate. Wrap well and eat within 3-4 days.
