Raw Vegan Brownies

Brownies that are guilt free, gluten free, dairy free, free from preserves or anything naughty? It can’t be possible, can it? Ooooh yes, it can! We had to share this recipe with you because it was too good not to, it’s deliciously chocolatey nutty and crunchy. And it gets better…there’s no cooking involved so you don’t have to sit in front of the oven drooling.

Ingredients
Brownie
- 100g walnuts
- 90g Borna Foods Hand Selected Natural Kernels Retail Packs 500g - £16.95 (20g roughly chopped)
- 8 pitted medjool dates - soaked in warm water for 20 minutes
- 2 tbsp cocoa powder
- 1 tbsp agave syrup
- coconut oil to grease the baking sheet
'Frosting'
- 15g cocoa powder
- 1 tbsp agave syrup
- 1 tbsp water
- 1 pitted medjool date - soaked in warm water for 20 mins to soften
Decoration
- 3 tsp desiccated coconut
- 5g Borna Foods Hand Selected Natural Kernels Retail Packs 500g - £16.95 - roughly chopped
- 5g walnuts - roughly chopped
How to make
- For the brownie, blend the walnuts and pistachio kernels until they make a flour-like consistency
- Add 2tbsp of cocoa powder and 1 tbsp of agave syrup and blend until fully mixed
- Roughly chop the dates, then gradually add them to the mix while blending. You may need to scrape the edges of the blender every now and then as the dates will make the mixture very sticky
- Move the mixture to a bowl and add the 20g of chopped pistachios. With your hand mix the pistachios evenly into the brownie mix
- Line a deep pot or dish with a baking sheet and grease with coconut oil, add the mixture to the dish and squash the mixture down with your fingers so it becomes very compact
- Put them in the freezer for 5 minutes
- Meanwhile for the 'frosting', add the 15g cocoa powder, 2 tbsp agave, 1 tbsp water, 1 date and 2 tsp desiccated coconut into a clean blender and blend until completely smooth. If the mixture becomes too dense add a little more water and blend again
- Remove the brownie from the freezer and add the 'frosting' to the top by spreading it with a knife.
- Top with desiccated coconut, chopped pistachios and walnuts and place in the fridge for 20mins to set
