Pistachio Pizza

Pistachio Pizza
Pizza, a film and a glass of wine…yesss…the perfect night in, either on your own or with a couple of friends. As good as traditional Italian pizzas are, why not mix it up with a home-made pizza topped with Borna’s 100% crunchy pistachio butter? If you don’t fancy getting messy in the kitchen then you can always buy pre-made pizza bases, which would reduce your cooking time by 30 mins.

Pistachio Pizza

How to make

  1. Firstly make the dough. Sieve the flour into a large bowl and add 1/2 tsp of salt, the yeast and mix together with your hand
  2. Add 2 tbsp of oil and half the water to the flour mix and stir with a dessert spoon, whilst slowly adding the rest of the water. The dough should start to get sticky, so you can start to use your hands, just make sure they are clean and floured
  3. Sprinkle a covering of flour onto a clean, dry surface and tip the dough out. Sprinkle some more flour on top of the dough and knead roughly for 5-10 minutes. If it starts to stick, just add a little more flour
  4. Place the dough in a clean, oiled bowl and cover with a damp tea-towel or cloth and put in a warm place for an hour to rise, it should double in size. It may take longer than an hour depending on the temperature
  5. Meanwhile, slice the onions thinly and sweat in a pan with olive oil and 1/2 tsp of salt until softened, leave to one side
  6. Pre-heat the oven to 220°c just before the dough is finished rising
  7. Once the dough has doubled in size, put on a dry, floured surface and 'knock back' (knock the air out of the dough) for another 5 minutes
  8. Split into 4 or 6 pieces and roll out into thin pizza bases with a floured rolling pin
  9. Put each base on a baking/pizza tray that has been either oiled or spread with semolina flour to prevent it sticking. You may need to cook in a couple of batches depending on oven size
  10. Spoon 4 tbsp of into each pizza, and spread evenly across the base and top with the cooked onion, season with salt and pepper, then place in the pre-heated oven for 15-20mins
  11. Just before serving top with pistachio kernels, fresh basil and a drizzle of olive oil
