Healthy Pistachio Chocolate Mousse
These mousses are quick and easy but it’s oh-so-rich and oh-so-amazing. This recipe is for 2 large portions, although you could share one, but why not treating yourselves! To really impress then I suggest you serve with a dollop of dairy-free cream and strawberries.

Healthy Pistachio Chocolate Mousse


How to make

  1. Blend the flesh of both avocados in a food processor until completely smooth
  2. Scoop the blended avocados into a large bowl and place to one side
  3. In a bowl, over a pan with a small amount of boiling water in, melt the chocolate
  4. To the blended avocados, add the melted chocolate, cocoa powder, agave syrup and pistachio butter. Mix together well, until all the ingredients are evenly mixed
  5. Spoon into ramekins and place in the fridge for at least 20 minutes. If you can't wait that long (like me!) place in the freezer for 5 minutes.
  6. Before serving sprinkle the cocoa nibs, pomegranate arils and pistachio kernels over the top of each mousse
