Cook a 3-Course Vegan Dinner on Valentine's Day

We asked Tomi, The Vegan Nigerian, to share the perfect 3-course vegan dinner to impress a loved one this Valentine's day... but with a twist.

She has put together a menu which brings influences from around the world, but with a special shout out to West African cooking.

Starter: Nigerian Ratatouille

A Nigerian interpretation of a well-known French Provençal dish. It makes a great starter and can be eaten on it's own or served with some delicious bread.

Main: Plantain Curry with Lemon & Thyme Rice

With the sweet undertones of cinnamon and nutmeg in the mix, this pairs perfectly with sweet plantain. To contrast all the sweetness, add some scotch bonnet peppers to give it some heat. The lemon and thyme rice adds an element of tanginess.

Dessert: Vegan Chocolate Almond Mousse

A gorgeous, light and healthy vegan dessert that's ready in under 10-15 minutes. Perfect for date night!
